Alpro Coconut Curry
New in your local store is Alpro's Coconut Cuisine. A very versatile product that can be used both for cooking and for baking. I used this one to make one of my favourite dishes, coconut curry. I made this very quickly since I was so eager to try Coconut Cuisine but it ended up being the best quick dish I made so far. I used a pre-made wok mix from the store, red curry paste, extra spices and basmati rice. The Coconut Cuisine leaves a coconut flavour lingering in the back, but not as strong as when you use coconut milk or coconut cream.


This Coconut Cuisine would also work well with soups or in your coffee. I will try and bake with it, so I'll keep you up to date on that.

Vegan Challenge inspiration
Forty meatless days has just ended and already a new challenge lingers on the horizons. Although lingers is not quite the correct term, since already a week has passed. The Vegan Challenge dares you to go a month without animal intake. This challenge however was my personal trigger to go fully vegan after being vegetarian for quite a while.
For those of you who ran out of inspiration and no longer know what to cook, and for those of you who still think that vegan cooking is quite the challenge (pun intended), here is some inspiration! If you want recipes, feel free to contact me.

Easter recap
This year is the first year I get to spend Easter the way it should be spend. Relaxing, eating a ton of chocolate and eating other non healthy food. I know that as a vegan, holidays can be hard, due to all the explaining and the fear of missing out on all the goodies. Not this year though!
