For those of you who live under a rock, today is world hamburger day and therefore world vegan hamburger day. I created this hamburger for the occasion. It's an adaption from a Korean dish, with seitan. It's spicy and sweet at the same time. It's finger licking good. Enjoy!
Ingredients:
450g seitan, cut into strips from 1cm width
Burger bread
Marinade
2 tbsp sweetened soy sauce
1 tbsp water
1 tbsp brown sugar
2 tbsp sesame oil
1 tbsp sesame seeds
2 scallions, green (white part is used for decoration)
4 cloves of garlic
Black pepper for seasoning
1 tbsp sambal oelek
2 tbsp mirin
sauce
1 tbsp veganaise
1 tbsp applecider
1 tbsp green apple, cut in tiny parts
2 Spanish peppers, in tiny parts
1 tbsp black pepper
decoration
White part of the scallions
Chinese cabbage
Kim Chi
Leftover apple
Add all the ingredients for the marinade in a large bowl, make sure they're well mixed. Pour this over the seitan and put aside for at least 30 minutes.
Mix all the ingredients for the sauce.
Cut open the burger breads and place them in an 180° oven for about a minute.
Heat up a pan and bake the seitan without using oil or butter. Bake them for half a minute on each side. Use the burger breads halves to absorb the rest of the marinade that's left in the pan.
Take a big leaf of the Chinese cabbage. On one side, place some Kim Chi, on the other start making your burger. Start with the seitan, add some Chinese cabbage, sauce, apple and the white of the scallions.
